Wisdom 4 You Yarn Give-Away

I saw a blog yesterday
that was having a yarn give-away.

So,
I say to myself,
"Self.
since you have to clean out your
yarn stash room
so the guys can get to the windows
and put in the new ones,
why don't you give some away?"


Today,
as I was
picking,
hunting
and
sorting
out yarn
spread over
the top of
a double bed
I found

that I know I will never get around to using.

Beef and Sour Cream / My Comfort Food

It's time to post
my#1 favorite
comfort food
along with
LOTS of pictures
to make your mouth water.

*~*~*~*~*~ INGREDIENTS ~*~*~*~*

1# Round Steak (cut for stir fry)

1 Onion (cut into rings)
size of onion depends on your LOVE of onions

1 small can Mushroom Stems and Pieces

8 oz Beef Broth

1/4 C Flour seasoned with
Garlic Powder, Salt & Pepper

1/2 tsp Thyme

1 small box Frozen Peas

8 oz Sour Cream

*~*~*~*~ Recipe ~*~*~*~*
1. Make sure meat is cut in bite sized pieces.

2. Dredge meat in "seasoned flour"
Quickly brown in skillet.

3. Add Onions , Beef Broth and liquid from Mushrooms.
* (I caramelized the onions 1st this time and it worked/tasted better than ever.)



4. Add Thyme.



5. Simmer for 45 minutes



6. Add frozen peas and heat.



6. Add sour cream and mix well



7. Serve over Mashed Potatoes, Noodles or Rice.


Serves 6 (+/-).
Can be frozen WITHOUT Sour Cream.

Warts and All

Ever heard the saying
"Beauty is in the eye of the beholder?"


How about this one . . .
"Even wart hog mommies think their babies are cute?"


Or . . . .
"I love you warts and all?"


There are so may times
I start
thinking about my friends,
and family,
in Logan,
who have known me for years.
Today,
for some reason,
is one of them.


I was reading an article
and the saying
"warts and all"
was mentioned
when referring to
being a friend.


It makes me laugh
at all the times
my many "warts"
were either ignored,
laughed at,
put aside,
or just trompled over
so our friendships lasted.


No one on Earth is perfect,
that's why friends are needed.


They ignore
(as best they can . . in their own ways)
those
"imperfections"
and travel right along,
on Life's Highway,
beside you . . .

speed bumps,
dangerous curves,
detours to who knows where,

and yet,
at the end of the ride,
they are there . . .
sometimes,
a little worse for the ride,
but still there.


So,
friends and family
from Logan,
I leave you with this poem:

From a Canadian Friend named Glenda

Glenda,
from Ontario, Canada,
sent me a coin with this image on it.


Today,
I receive an email
with this message to me:
Just so we have it 'right'...

I went
to the sites
she suggested.
Came up with
LOTS
of interesting information


So, for your
perusal,
here is some
of the background information.
and photos,
of Canadian Inukskuits
that I found.


(Inukshuk by Renfrew, Ontario)

An "inukshuk"
[plural: inuksuit],
is an Inuit word
that literally translated means
"stone man that points the way."


Inukshuks
are stone cairns
that were erected by Inuit
at prominent locations throughout the barrens
to serve as guideposts or markers.


They were also erected
to help herd caribou
during their annual migration
towards where they could be more easily hunted
by the ancient Inuit.


Lifelike figures of rock,
they are erected by the Inuit
and stand along Canada's most northern shores.


They are Inukshuk
(pronounced In-OOK-Shook),
which is an Inuit word meaning
"in the image of man"
Guiding you home...
the Inukshuk has always felt special to us.


They are awesome,
as the sheer size is overwhelming.


The Inukshuk symbolism is far reaching
- they were a beacon to those looking for
the right direction and a safe passage.


Inukshuks
can now be seen in
people's gardens and yards,
on the shores by their cottages,
out front of condominiums,
in the boardroom.

in all shapes & sizes,
from silver coins
to mini rock figurines,
to gorgeous oil paintings.

White Chili . . . and Other Random Thoughts


This isn't a picture
of our actual White Chili cooking
but it is a pretty close facsimile.

As a matter of fact . . .
All of the pictures are imposter's
I needed to protect the privacy
of our chili.

You know with apologies to the
writers of Dragnet
"The story you are about to read is true,
The pictures have been changed to protect their innocence."

Well, sort of . . . :

But, I digress . . .
(there is that word I love again)

Alicia and Jared,
our neighbors across the street,
should be welcoming Mr. Aiden into the world
within a week or so.

Gene and I decided it would be
"neighborly"
if we made them
some "quick fix" meals . . .
Well, maybe "quick fix" foods is more correct.

We came up with this list:
1. White Chili . . . from my S-I-L's recipe . .via Lauren
2. Beef and Sour Cream . . . my ALL TIME FAVORITE comfort food
3. Beef Stew . . . . one of Gene's best tasting dishes
4. some type of chocolate/peanut buttery thing . . .Jared LOVES this combination
5. Ice Cream Salad . . . tastes like a Drum Stick in a 9" x 9" dish
6. Debbie's Vegetable Salad . . . frozen veggies, a quick, heat and mix dressing . . . SUPER QUICK
And whatever else catches our fancies.


White Chili is done,
zip-locked,
and in the freezer.
So is the Beef and Sour Cream.
I will include the recipe,
but must add
that I also thought that
Yancey's Fancy

and Yancey's Fancy

would go good with the chili
and
MAN-OH-MAN
was I ever right.
Y-U-M-M-O
to quote a
famous cook we all know.


SO,
here goes,
with apologies to Cindy & Laureen for any typos:


~*~*~WHITE CHILI ~*~*~
1 large jar White Beans
6 Cups Chicken Broth
2 Cloves Garlic . . minced
2 Medium Onions . .sliced /diced / whatever you like
2 T Cumin (ground)
1 1/2 tsp Oregano
1/4 tsp Cloves (ground)
1/4 tsp Cayenne Pepper
2 Cans Diced Green Chilies (4 oz cans)
4 Cups Rotisierei Chicken . . . pulled apart/cut into cubes/ however you want it to look

Now for THE HARD PART - - - -

Mix all ingredients together and simmer.

On Sunday, March 21, 2010,
I just get a message from Lauren.
She forgot to tell me
to top the Chili with
White Tortilla Chips,
Cilantro,
Sour Cream
and
Cheese to taste . . .

Gene and I
are BEAN LOVERS
so he also added
1 Can Canolini / Great Northern beans
(whichever isn't also labeled as White Beans)
1 Can Soy Beans (these are SO GOOD! ! !)


Since there is SO MUCH BROTH
and I like my soup
as "brothless" as I can get it,
I added a couple of handfuls
of Oyster Crackers
to the bottom of the bowl.
(Wouldn't have had to
if Miss Laureen
had reminded me
about the Tortilla Chips.)
