Fresh Corn and Balck Bean Salsa


Combine 1st 6 ingredients in a medium sized bowl.1 Can Black Bears
2 Fresh Ear of Corn on the Cob . . freshly steamed/roasted, cut off the cob
(or 1can of whole kernel corn, rinsed and drained.
1/4 C Onion . . . chopped
1/4 C Bell Peppers, chopped . . any color
1 Clove Garlic, minced
8 - 10 Cherry/Grape Tomatoes, seeded and cut in half for cherry or thirds for grape.
(or cut larger tomatoes into small wedge shapes)


 
Mix last 6 ingredients for dressing.1 T Parsley OR Cilantro . . . fresh
1T Sea Salt
1/2 tsp Fresh Ground Pepper
1T Lemon Juice (more to taste)
1T Lime Juice (more to taste)
2T Olive Oil

Top salad mixture with dressing and let set in fridge overnight . . . or less, if you are hungry!

I topped it off with sour cream . . and guacamole would be pretty awesome too!
