Yummy Thai

Very descriptive . . not only is it the name of a local restaurant but it describes the food to a "T," yummy Thai.


The husband and I were going to go out to Zebb's for Valentine's Day. We never do anything fancy for V-Day . . . we just, usually, try to go to a place we haven't been to for a while.

Well, tonight was different. The husband checked out Yummy Thai's web site, and, we have wanted to go there, so it was like getting two for one, in more ways than one.

We started out with an appetizer, Golden Triangles. I am sure you have had something like this at any oriental restaurant/buffet you have been to.


The wrappers on these were perfect . . . light and crispy. This picture is darker than what we had. Ours were a perfect golden brown. Oh, and it came with a sauce. I think the flavor I tasted was slightly plum.

The husband had their Seafood Salad . . . no choice of spiciness and it came out hot . . . too hot for me, but he liked it that way.


This was what it looked like, and the husband didn't complain about the calamari. He said the larger pieces had that usual calamari chewiness but the smaller pieces were good. Then there shrimp, scallops and mussels plus one in the shell used for decoration.

Speaking of decoration, their plating was so pretty.

Next, what I ordered. I asked out waitress what she would recommend. She said most people order the Pud Thai. I asked her what she likes to order and she smiled and said Street Noodle. So that was what I ordered, with chicken.



The noodles tasted home made. I was going to ask if they were but I forgot. They were thicker than noodles I am used to seeing in stores and their taste was more home made than store bought. Shoot, I even liked the steamed broccoli that came on it. You can't tell, but there is a lot of chicken in it too . . . I could have gotten it with pork, tofu, beef, shrimp, squid, scallop, or mixed seafood.

Last, and best, was the dessert. The web page didn't have a picture of the Taro Custard, but this is pretty close, their Sticky Rice Custard.


The Taro Custard had a brown look to it, due to the Taro root, served on a plate with chocolate drizzles across it and strawberry halves on the corner. I liked it so much I told the husband he could eat the strawberries and I would "stick" with the custard.

Oh, their Valentine Special was with an appetizer, 2 entree's and 2 drinks (we had Coke's) the dessert was free. So we left, full, fat and sassy, for $38 . . . not bad for New York where the taxes shoot the prices way out of line.

New taste Sensation, Frozen Oreos

I have discovered a new taste sensation. 

You know how scientists/inventors may be trying for one thing and end up with something else just as viable? I think my favorite, and this may be an urban myth, but I am pretty sure it happened . . a scientist was working on a "recipe" for hand lotion, or something similar to that. It wasn't coming out exactly right . . it had the properties they wanted  but wasn't quite 100% on. Somehow, this liquid got spilled on the floor. It did a wonderful job or removing the wax on the floor . . . . maybe it was nail polish remover . . . it has been a long time since I taught science.

Anyway . . . what they were trying for became something else . . a user friendly floor wax remover that was gentle on the hands . . . what woman wouldn't have wanted that?


But, I digress . . . . the husband brought home cookies from Walgreen's. (He does cigarette runs almost every morning and I never now what he will bring home that he found on sale.) They were their version of Double Stuff Oreos. 


I am not a a big fan of the DS Oreos, but I do like the regular ones. The Walgreen version . . . I like them.


A week, or so, ago, it was quite humid. The Oreos had been opened and were getting that "soft" feeling. Still tasted fine, but the cookie part wasn't crunchy as it should be. I threw them into the freeze hoping that it would "re-crunch" them. To my surprise, they were awfully good. The stuffing in the center was very hard . . it was bite-able, but very firm. 


I had discovered a new way to eat Oreos . . FROZEN ! ! ! ! There is just something about biting and chewing something hard that I enjoy and these cookies are now in that group.

Ice Cream Salad

Just a little treat, from me to you an yours, for the end of August.


Tastes like a plate full of Ice Cream Drumsticks!



1 C Brown Sugar
1 Stick Butter or Margarine

2 C Rice Chex (crushed)
2 C Shredded Coconut

1 C Almonds (sliced)
8" x 8" pan



Directions:


  1. Melt Butter and Brown Sugar together . . microwave or stove top is fine

  2. Add Rice Chex, nuts and coconut, mix well

  3. Press 1/2 of the mixture into the bottom of the pan.

  4. Cover mixture with Ice Cream . . spread to edges of pan.
  5. Top with remaining butter/brown sugar mixture.
  6. Cover with foil and freeze.
  7. Leave out 5 - 10 minutes to soften, cut into squares and serve.







Hints:


  1. I have used Crispix, Rice Krispies and Frosted Flakes cereals in both name brand and generic. The generic tastes just as good, if not better.

  2. Butter or margarine . . mixed with brown sugar they both taste great!

  3. Normally, I make a double recipe of the topping mixture . . . I want a nice top and bottom "crust."

Easy Fruit Cobbler

OMG . . . I had forgotten HOW GOOD THIS IS ! ! ! ! ! ! ! ! ! ! !

And yes, it does deserve to be in all caps with a row of exclamation points. Even Abby is sitting behind me licking & liking the "leftovers" from the bowl and Indy thought she wanted to finish the leftovers that Abby left . . . but instead she decided to have a few licks and is now sitting, well, really standing, and waiting to see if her dad will giver her any of what he is eating.

But, I digress . . . haven't used that word for a long time . . . I first got it a little after I met Gene. I was talking to some other people in the group and one said he had to go check on his Peach Cobbler. That sounded so goo, so I asked if it was easy . . . and his response was to laugh. When he finally gave me the recipe, I found out why. The recipe . . . buy a box of JIFFY White Cake mix and use the recipe on the side of the box! It isn't called Fruit Cobbler . . . but that is what it ends up being.

The recipe, if I can even call it that since it is so easy, is:

1 Can Pie Filling
1 box White Jiffy Cake Mix
1/2 C Butter, softened (I prefer margarine . . but that is up to your taste)
1/2 C Chopped Nuts (optional)
1/2 C Oats (my addition . . . optional also)

  1. Put pie filling in an 8" x 8" cake pan (I have also used a pie pan.)
  2. Combine cake mix with butter, nuts and oats to make a "crumble" topping and place on top of pie filling
  3. Bake for 45 - 50 minutes in a 350 degree oven.
  4. Enjoy!
Now, do you think you can handle a recipe this difficult? If I can do it, anyone can. he he he he he

Oh, I forgot another part of the recipe . . it is MORE AWESOME served right out of the oven over vanilla ice cream . . .. Y-U-M-M-Y-L-I-C-I-O-U-S ! ! ! ! ! ! But it ain't bad like we had it today, cold for breakfast, either.Will have to take a picture of what is left so you can see what it looks like after I ravenously attacked it. This time I made it with Raspberry Pie Filling (I loves me raspberry seeds . . . seems that all day I find these seeds in my teeth and it is like a pop of surprise taste in there . . . I know, TMI), Peach, Cherry and Apple. I don't think I have found pie filling in any other fruit flavor, but I am sure it would be as good as these if you used something else.

Oh, I did forget . . . taste the pie filling before you put the topping on it. The raspberries were a little tarter than I like so I sprinkled a thin coating of sugar over the top of the berries. Now, when you eat it there is a slight sugar crunch on some of the raspberries . . quite tasty.

Need to take a pix bfore it is all gone, get it to the computer downstairs to upload and then I will post this. Ler me know if you make it and what you think. Just remember, it isn't a real cobbler, but FAUX COBBLER is better than no cobbler at all.

Beef and Sour Cream / My Comfort Food

It's time to post
my#1 favorite
comfort food
along with
LOTS of pictures
to make your mouth water.

*~*~*~*~*~ INGREDIENTS ~*~*~*~*

1# Round Steak (cut for stir fry)

1 Onion (cut into rings)
size of onion depends on your LOVE of onions

1 small can Mushroom Stems and Pieces

8 oz Beef Broth

1/4 C Flour seasoned with
Garlic Powder, Salt & Pepper

1/2 tsp Thyme

1 small box Frozen Peas

8 oz Sour Cream

*~*~*~*~ Recipe ~*~*~*~*
1. Make sure meat is cut in bite sized pieces.

2. Dredge meat in "seasoned flour"
Quickly brown in skillet.

3. Add Onions , Beef Broth and liquid from Mushrooms.
* (I caramelized the onions 1st this time and it worked/tasted better than ever.)



4. Add Thyme.



5. Simmer for 45 minutes



6. Add frozen peas and heat.



6. Add sour cream and mix well



7. Serve over Mashed Potatoes, Noodles or Rice.


Serves 6 (+/-).
Can be frozen WITHOUT Sour Cream.

White Chili . . . and Other Random Thoughts


This isn't a picture
of our actual White Chili cooking
but it is a pretty close facsimile.

As a matter of fact . . .
All of the pictures are imposter's
I needed to protect the privacy
of our chili.

You know with apologies to the
writers of Dragnet
"The story you are about to read is true,
The pictures have been changed to protect their innocence."

Well, sort of . . . :

But, I digress . . .
(there is that word I love again)

Alicia and Jared,
our neighbors across the street,
should be welcoming Mr. Aiden into the world
within a week or so.

Gene and I decided it would be
"neighborly"
if we made them
some "quick fix" meals . . .
Well, maybe "quick fix" foods is more correct.

We came up with this list:
1. White Chili . . . from my S-I-L's recipe . .via Lauren
2. Beef and Sour Cream . . . my ALL TIME FAVORITE comfort food
3. Beef Stew . . . . one of Gene's best tasting dishes
4. some type of chocolate/peanut buttery thing . . .Jared LOVES this combination
5. Ice Cream Salad . . . tastes like a Drum Stick in a 9" x 9" dish
6. Debbie's Vegetable Salad . . . frozen veggies, a quick, heat and mix dressing . . . SUPER QUICK
And whatever else catches our fancies.


White Chili is done,
zip-locked,
and in the freezer.
So is the Beef and Sour Cream.
I will include the recipe,
but must add
that I also thought that
Yancey's Fancy

and Yancey's Fancy

would go good with the chili
and
MAN-OH-MAN
was I ever right.
Y-U-M-M-O
to quote a
famous cook we all know.


SO,
here goes,
with apologies to Cindy & Laureen for any typos:


~*~*~WHITE CHILI ~*~*~
1 large jar White Beans
6 Cups Chicken Broth
2 Cloves Garlic . . minced
2 Medium Onions . .sliced /diced / whatever you like
2 T Cumin (ground)
1 1/2 tsp Oregano
1/4 tsp Cloves (ground)
1/4 tsp Cayenne Pepper
2 Cans Diced Green Chilies (4 oz cans)
4 Cups Rotisierei Chicken . . . pulled apart/cut into cubes/ however you want it to look

Now for THE HARD PART - - - -

Mix all ingredients together and simmer.

She forgot to tell me
to top the Chili with
White Tortilla Chips,
Cilantro,
Sour Cream
and
Cheese to taste . . .

Gene and I
are BEAN LOVERS
so he also added
1 Can Canolini / Great Northern beans
(whichever isn't also labeled as White Beans)
1 Can Soy Beans (these are SO GOOD! ! !)


Since there is SO MUCH BROTH
and I like my soup
as "brothless" as I can get it,
I added a couple of handfuls
of Oyster Crackers
to the bottom of the bowl.
(Wouldn't have had to
if Miss Laureen
had reminded me
about the Tortilla Chips.)
