Portabella Pizzas

We had these tonight for supper. Well, I must be honest . . . we almost had these tonight for supper. I had forgotten to write the ingredients down so we had mushrooms, sauce and used shredded Mozzarella Cheese.

The husband didn't scoop out the centers. He just added rubbed the outside of the mushrooms with olive oil and put the the sauce (1/4 cup each) on top of the mushrooms and then sprinkled the cheese on top before he put them in a 350 degree oven. Cooked until the cheese was melted.

This was one of the BEST meals I have had in a LONG time.

Below is the "official" recipe. Enjoy!



 Ingredients:
6 mini Portabella mushrooms (or 2 large Portabella mushroom caps)
1/2 cup marinara sauce
approx. 6 slices Madara Smoked Salami
2 oz. black olives
3 oz. low-fat Mozzarella or Bulgarian Feta cheese
1 egg white


Preheat oven to 400 degrees. Clean mushrooms and scoop out the insides and stem with a spoon. Place on baking pan and bake for 7 minutes. While mushrooms are baking, grate Mozzarella or Bulgarian Feta Cheese, and combine in a bowl with one egg white. (Usually low-fat cheese has trouble melting, so this technique helps the cheese melt while adding a bit of protein.) Remove mushrooms from oven, and turn the broiler to High. On the mushrooms layer pizza sauce, cheese mixture, olives, and pepperoni slices. Return pan to oven and broil on High for 3 minutes or until cheese has melted and started to brown.
