Candy Cane Snowball Cookies
Makes 5 Dozen
2 C Butter, softened
1 C Confectioners Sugar
1 tsp Vanilla
3 1/2 C All Purpose Flour
1 C Chopped Pecans
8 oz White Candy Coating, melted
1/3 -> 1/2 C Crushed Peppermint Sticks
MAKING DOUGH
- Cream butter and sugar until light and fluffy, 5 - 7 minutes.
- Beat in vanilla.
- Gradually beat in flour.
- Stir in pecans.
- Refrigerate, covered, until firm enough to shape into balls, 3 -> 4 hours.
BAKING
- Preheat oven to 350 degrees F.
- Shape dough into 1 inch balls.
- Place 2 inches apart on an ungreased cookie sheet.
- Bake until lightly browned, about 15 minutes.
- Remove from pans to wire racks. Cool completely
DECORATING
- Dip tops of cookies into candy coating.
- Allow excess to drip off.
- Dip into crushed peppermint sticks.
- Let stand until set.
