Candy Cane Snowballs

 Candy Cane Snowball Cookies

Makes 5 Dozen


2 C Butter, softened

1 C Confectioners Sugar

1 tsp Vanilla

3 1/2 C All Purpose Flour

1 C Chopped Pecans

8 oz White Candy Coating, melted

1/3 -> 1/2 C Crushed Peppermint Sticks


MAKING DOUGH

  1. Cream butter and sugar until light and fluffy, 5 - 7 minutes.
  2. Beat in vanilla.
  3. Gradually beat in flour.
  4. Stir in pecans.
  5. Refrigerate, covered, until firm enough to shape into balls, 3 -> 4 hours.
BAKING
  1. Preheat oven to  350 degrees F.
  2. Shape dough into 1 inch balls.
  3. Place 2 inches apart on an ungreased cookie sheet.
  4. Bake until lightly browned, about 15 minutes.
  5. Remove from pans to wire racks. Cool completely
DECORATING
  1. Dip tops of cookies into candy coating.
  2. Allow excess to drip off.
  3. Dip into crushed peppermint sticks.
  4. Let stand until set.
