Thursday Night Supper

Roasted veggies for supper. These are the left overs from Sunday's roast pork loin with root veggies.



I am still amazed that Mom never roasted root veggies before . . we would have carrots, potatoes, onions and celery (I know, I know . . it isn't a root veggie) roasted in with pot roast, but none of the others . . turnips, rutabegas, parsnips.

The husband has introduced me to the sweet flavor of these inexspensive roots.
