Green Bean Soup

Yep, you read that right . . . Green Bean Soup!

Something the husband dreamed up. I laughingly named it and I think it will stick.

It was S-O-O-O-O-O good.



Here is the "difficult" recipe.

1 pound fresh Green Beans
1 can Hunts 100% Natural Diced Tomatoes . . . and I know any tomatoes would work
1/4 Cup diced Green Pepper
1/4 Cup Diced red Onion
1/3 Cup Apple Cider, or White, Vinegar
1 clove of garlic, minced
Sprinkle in Italian Seasoning, to taste.

Put everything in a sauce pan.
Bring to a boil.
Let simmer for 5 minutes for crunchy beans . . longer for softer.
