So easy and fast, whichever method you use.
2 pounds Chicken Breasts,
cut into bite sized pieces

2 C Pineapple Juice
|
|
1/3 C Soy Sauce
|
|
½ C Brown Sugar - optional
|
|
Brown Rice - optional
|

|
Lightly spray a skillet with cooking spray.
|
|
Brown chicken pieces.
|
|
Add 1 C pineapple juice, soy sauce and brown sugar
(optional) to chicken in pan.
|
|
Heat until liquid mixture boils, then simmer for 10
– 15 minutes.
|
|
Serve with brown rice made with pineapple juice.
|

|
Combine all ingredients together in a crock pot.
|
|
Cook 6 – 8 hours on low.
|
|
Add brown rice about 4 hours into the cooking
process.

HINTS
Instead of Pineapple Juice, I substituted these:
1. Pineapple chunks in natural juices with the chicken.
2. Crushed Pineapple for cooking the brown rice.
