Pineapple / Hawaiian Chicken

So easy and fast, whichever method you use.

2 pounds Chicken Breasts, cut into bite sized pieces
2 C Pineapple Juice

1/3 C Soy Sauce

½ C Brown Sugar - optional
Brown Rice - optional



Recipe #1
Lightly spray a skillet with cooking spray.
Brown chicken pieces.
Add 1 C pineapple juice, soy sauce and brown sugar (optional) to chicken in pan.
Heat until liquid mixture boils, then simmer for 10 – 15 minutes.
Serve with brown rice made with pineapple juice.

Recipe #2
Combine all ingredients together in a crock pot.
Cook 6 – 8 hours on low.
Add brown rice about 4 hours into the cooking process.

HINTS
Instead of Pineapple Juice, I substituted these:
1.     Pineapple chunks in natural juices with the chicken.

2.     Crushed Pineapple for cooking the brown rice.
