Caramel Rice Pudding

Sitting out cooling . . . makes 6 HEAPED servings.


3 C Cooked Rice
½ C Raisins (optional)
1 tsp Vanilla
1 (14 oz) can Sweetened Condensed Milk
1 (12 oz) can Evaporated Milk
1 T Sugar
1 tsp Ground Cinnamon
1 tsp Ground Nutmeg

1.     Spray inside of 2 – 3 ½ quart slow cooker with cooking spray.
2.     Mix first 5 ingredients in the slow cooker.
3.     Cover and cook on low heat for 3 – 4 hours, stirring occasionally.
4.     Check at 3 hours, if liquid hasn’t evaporated enough (your determination) leave the cover off the last hour.
5.     Serve warm or cold, sprinkled with cinnamon, sugar and nutmeg.
