Buffalo Chicken and Noodles

On Oct 20, I posted a recipe, and pictures, for Pulled Buffalo Chicken. I think we ate 6 or 8 sandwiches form the roasted chicken we used for this recipe . . and we still had quite a bit of chicken left.

Yesterday, Gene took the left over broth and chicken and made THE BEST Buffalo Chicken and Noodles.




Onions
Celery
Carrots
left over Buffalo Pulled Chicken broth
left over Buffalo Pulled Chicken
Egg Noodles

1. Dice onions, celery and carrots and saute until tender.
2. Place sauteed veggies, broth, chicken and noodles in a stock pot.
3. Cook according to directions for noodles.

That's it! Talk about E*A*S*Y ! ! ! !

To serve, I go back to my Indiana roots. No Hoosier worth their salt would EVER eat Chicken and Noodles without a mashed potato bed for them to rest in.

I made mashed potatoes and just before serving, I place a dollop of Sour Cream into a "spoon made crater" in the potatoes, then topped with the Chicken and Noodles.

I think the BEST recommendation I could give for this is from our oldest cat, Abby . . . she begged for some chicken, I gave her some and she got a noodle mixed in with it and she LOVED the noodle . . . she ate all the noodles I would give her . . . so, not only is the meal Paula and husband approved, but it got the "Paw of Approval" from Abigail.

  1. That looks yummy, too. (I got a Crock Pot, for my birthday!! Now I can make the Pulled Buffalo Chicken. :D)
