Easy Fruit Cobbler

OMG . . . I had forgotten HOW GOOD THIS IS ! ! ! ! ! ! ! ! ! ! !

And yes, it does deserve to be in all caps with a row of exclamation points. Even Abby is sitting behind me licking & liking the "leftovers" from the bowl and Indy thought she wanted to finish the leftovers that Abby left . . . but instead she decided to have a few licks and is now sitting, well, really standing, and waiting to see if her dad will giver her any of what he is eating.

But, I digress . . . haven't used that word for a long time . . . I first got it a little after I met Gene. I was talking to some other people in the group and one said he had to go check on his Peach Cobbler. That sounded so goo, so I asked if it was easy . . . and his response was to laugh. When he finally gave me the recipe, I found out why. The recipe . . . buy a box of JIFFY White Cake mix and use the recipe on the side of the box! It isn't called Fruit Cobbler . . . but that is what it ends up being.

The recipe, if I can even call it that since it is so easy, is:

1 Can Pie Filling
1 box White Jiffy Cake Mix
1/2 C Butter, softened (I prefer margarine . . but that is up to your taste)
1/2 C Chopped Nuts (optional)
1/2 C Oats (my addition . . . optional also)

  1. Put pie filling in an 8" x 8" cake pan (I have also used a pie pan.)
  2. Combine cake mix with butter, nuts and oats to make a "crumble" topping and place on top of pie filling
  3. Bake for 45 - 50 minutes in a 350 degree oven.
  4. Enjoy!
Now, do you think you can handle a recipe this difficult? If I can do it, anyone can. he he he he he

Oh, I forgot another part of the recipe . . it is MORE AWESOME served right out of the oven over vanilla ice cream . . .. Y-U-M-M-Y-L-I-C-I-O-U-S ! ! ! ! ! ! But it ain't bad like we had it today, cold for breakfast, either.Will have to take a picture of what is left so you can see what it looks like after I ravenously attacked it. This time I made it with Raspberry Pie Filling (I loves me raspberry seeds . . . seems that all day I find these seeds in my teeth and it is like a pop of surprise taste in there . . . I know, TMI), Peach, Cherry and Apple. I don't think I have found pie filling in any other fruit flavor, but I am sure it would be as good as these if you used something else.

Oh, I did forget . . . taste the pie filling before you put the topping on it. The raspberries were a little tarter than I like so I sprinkled a thin coating of sugar over the top of the berries. Now, when you eat it there is a slight sugar crunch on some of the raspberries . . quite tasty.

Need to take a pix bfore it is all gone, get it to the computer downstairs to upload and then I will post this. Ler me know if you make it and what you think. Just remember, it isn't a real cobbler, but FAUX COBBLER is better than no cobbler at all.
