Bread Pudding

The husband actually suggested I make Bread Pudding again . . . what a shock!

This time I wanted to use bread . . . last time I used bread crumbs. It was still good, but I knew "real bread" would make it better.

People have given me recipes, easy recipes, and, of course, when I want to find one I can't. So, I winged it from a couple of recipes I found online.

I ended up using this:
10 slices of Sara Lee bread (70 cal a slice)
3 Eggs
1 C of Domino Light Sugar
4 C 2% Milk
Cinnamon
Nutmeg
Vanilla

  1. I whisked the eggs and sugar, then added the milk and whisked again.
  2. Sprinkled Cinnamon on top until it looked right
  3. Grated Nutmeg on top of the cinnamon . . . stopped when my fingers got down to the grater because we only had small nutmeg pieces.
  4. Poured Vanilla in and, again, guessed at how much I wanted.
When I poured the mixture on the bread, it didn't quite cover the way I wanted, so I whisked another egg, and what was left of our milk, probably 1/4 C, and poured that on top of the bread.

Now, it looked right. So I cooked it for 30 minutes at 350 degrees . . not quite done so added another 10 minutes. WOW! Did the bread ever swell up . . . but, after sitting on top of the stove for about 2 hours, the bread has collapsed.

Must check the freezer to see if there is ice cream to put on top of it. :0}

Well, there was ice cream to put on top of it. So I warmed a pice in the microwave, added the ice cream and was in comfort food heaven!

  1. I love bread pudding with a dab of vanilla pudding. But I have never made bread pudding.

    1. You MUST try this recipe. It is so simple . . and it swells up just like stuffing, and then falls once it is removed, so don't let that bother you.

      We used the Sara Lee Honey Wheat bread because it is 70 Cal a sice, but any bread could be used.

      As a matter of fact, you could use the bread crumbs that come in the cans . . just don't get the cornbread or seasoned bread crumbs :0}

  2. Oh. My. Goodness! I LOVE bread pudding!!! My husband acts like it is the grossest thing in the world. We used to go to Old Country Buffet, and I would always get the bread pudding after dinner. My husband always had to comment on it. So one day I said "If it's so gross, why isn't there ever any up there then?" Ha. He didn't have anything to say to that.. ;) I want to try this recipe, but I would probably have to eat it all myself. (Hmmmm... Now there's a plan! Lol..) :P

    1. YOu will appreciate this - I used to tell the husband"Let's go to Old Country Buffet so I can eat my weight in Bread Pudding."

      This actually tastes as good, if not better than theirs.

      You can always cut the resipe down . . like divide by 3 so you use 1 egg.

      Also, you can use regular sugar and regular bread. The husband and I are just trying to count calories, so I tried to make it as healthy as possible.

      Let me know how it turns out . . . Oh, and you might want to have some vanilla ice cream hanging around to top it with . . when warm, the ice cream melts just enough to run all over the pudding.

  4. I make my bread pudding a bit back to front to you. For a big pudding I use two loves of bread, rip the bread up, pour about a pint and half to two pints of milk over it, then mush it all up with my hands (my hadns get a bit cold) to ensure that all the bread has soaked up all the milk, then I put it into a buttered dish and bake at about 160 for around an hour ish. I sometimes fancy it up and put dried fruit in and a bit of spice. I also use just hot cross buns to give it a nice flavour. It never last long in this house - 24 hours tops!

  5. Oh! Interesting... My hubs LOVES bread pudding!!! I noticed that you have used some reduced calorie ingredients. He is not a low cal guy. Would he like this?

      I don't think he would know the difference . . . mu hubs was the same way. But, you can use regular bread and sugar . . . let me know how it tastes when you make it.

      I am pretty sure we will have it again this next weekend . . I coud eat it everyday, but the body would show it :0}
